Quickest breakfast and a great post workout meal, this classic overnight oats is perfect to all vegans and a great start to those who are planning to be one. Just make sure to use a plant-based milk to make it vegan.

By soaking the oats at night together with the variety of fruits of your choice and forgetting about it until morning, you’re going to have a milky, creamy, porridge-like, protein-rich, quick breakfast. Great for those who are always on-the-go, not only those who are vegans but also those who are trying to live healthy. Since, it’s protein-rich it is many’s favorite post or pre workout snack.

INGREDIENTS:

· 1/3 cup plant-based yogurt

· 1/2 cup (heaping) rolled oats

· 2/3 cup unsweetened milk of choice

· 1 tablespoon chia seeds or ground flaxmeal

· 1/2 teaspoon vanilla extract

· Pinch of salt

· 1-2 tablespoons honey or maple syrup


DIRECTIONS

1. Whisk together all ingredients in a medium-sized mixing bowl. Spoon into a jar with a tight-fitting lid.

2. Close and refrigerate for at least 4 hours, but preferably overnight before eating.
